Fluffy Pancake
Pancake! I love pancake! Here's an easy pancake's recipe. Keep reading.
Ingredients:
1. 3/4 cup milk (I use yoghurt)
2. 1 tbs lemon juice
3. 2 tbsp butter, melt it
4. 1 egg
5. 1/2 tsp vanilla extract
6. 1 cup all purpose flour
7. 2 tbsp sugar
8. 1 tsp baking powder
9. 1/2 tsp baking soda
10. 1/2 tsp salt (a pinch if use salted butter)
11. 1 tsp lemon zest
* tbsp = tablespoon
* tsp = teaspoon
Instructions:
1. Mix milk and lemon juice if you don't use yoghurt. Stir, set aside, leave it for about ten minutes. It will be buttermilk. If you use yoghurt, thin it a little bit with milk so that the batter will not be too thick. If you are first timer, I suggest you to use milk and lemon juice so that you'll know the consistency of your batter.
2. Stir the egg with fork or whisk. Then, mix melted butter, buttermilk and egg.
3. In a larger bowl, mix the dry ingredients: flour, baking powder, baking soda, salt and lemon zest. Stir well.
Pour the milk batter into the dry ingredients, stir until there's ALMOST no lump. The point is "DO NOT OVER MIX". Cover it using plastic wrap for about 10 to 15 minutes
4. Heat the pan with medium heat, spread thinly with butter. Stir the batter twice or 3 times. Pour 1/4 cup batter into the pan, wait until the bubbles appear (about 2 - 3 minutes), then flip it, cook it for about 2 -3 minutes. Lift it, then repeat the same process until you finish the batter.
It's easy, isn't it?
Step 4 is my favourite part. In this step, I can watch the pancake slowly becomes taller and fluffy. I serve the pancake with caramel sauce. There are plenty of caramel sauce recipe in the internet. I can't write it down because I didn't use the exact mesurement for the sauce. I just used my gut and feeling in making it. So, go find your desire caramel sauce recipe. :)
